I have been a huge fan of COOKING LIGHT magazine for the past few years. I started reading it when I would visit my folks over the holidays. I borrowed a copy of one of my mom’s CL issues and loved the results I got when I tried the Korean Bolgoi (grilled strips of beef in a sweet, salty marinade).

I was immediately hooked on the magazine. I eventually started receiving a subscription to COOKING LIGHT. I have been a subscriber to both BON APPETIT and GOURMET magazines, let me just say that I think COOKING LIGHT is vastly superior to those magazines (although I do like reading them) because the recipes are not so high end (i.e expensive) and involves expensive, hard to find ingredients.

I also enjoy the health tips and articles the magazine provides. I have tried a lot of recipes from COOKING LIGHT and they are all delicious as well as healthy. This magazine is not just about eating healthy but staying healthy too.

Here are a few tips of the things you will need to make some good soup. The first thing you will need is chicken bones. Don’t worry these bones can be leftover from the roast chicken you had at dinner the other night. Now you know you can get a couple of meals from a single chicken dinner.

The next thing you need to do is boil the entire chicken carcass in a stockpot, then you will need to add several quarts of water and cover the pot. Next you need to add some seasonings and a few carrots along with some onion, celery and herbs. Once the water starts to boil, you will need to turn it down to a very low simmer. Next you will want to remove the foam that floats on the top; this is protein that is in the chicken.

You will want to keep simmering the mixture for a few more hours even all day if you have the time. You will need to continue to add ore water but be sure to leave the lead on the pot as this will help reduce the evaporation rate. By doing this you will intensify the flavors of the soup. The next thing you need to do is strain the stock. You can throw away the bones and the vegetable.

You will now need to add in new vegetables and also the chicken meat that you have leftover. At this point you can add potatoes along with the vegetables. If you like you can add the following to your soup: turnips, rutabagas, parsnips, carrots, zucchini, sweet potatoes, peppers, onions, or just about anything that you like.

Once the chicken soup is almost done, you could even add some noodles or even rice and also vegetables that cook quickly. You could add things like cabbage, broccoli, or just abut anything in a garden.

You don’t need a home fitness trainer to come to your house to get you fit. You don’t need to spend a ton of money on workout equipment. You can if you want to but you don’t have to. If you want to get fit cheaply find the best workout tape for your level and then do it as recommended.

Eating healthy is important too. I tell people I’m a hamburger or ground beef gourmet and for the most part it’s true. So much so that I’ve never eaten hamburger helper and never will. From the smell of it they should call it hamburger killer instead of hamburger helper. Yuck.

IMO ground round is the best ground beef you can get. I’ve had ground sirloin and it’s very good too. I didn’t like the ground filet mingnon as well. Ground round is always going to be cheaper than ground sirloin, if you can even find ground sirloin. An acceptable substitue is ground chuck.

Make sure any ground beef you use is 80/20 or 85/15. Anything lower is to greasy and anything higher doesn’t have enough fat and you actually have to fry it in margerine so it defeats the purpose of buying extra lean ground beef.

Sloppy joes and hamburger potato casserole

I could have put this sloppy joes recipe up before this but for some reason I didn’t. I happen to like sloppy joes quite a bit and have them a couple of times per month and last week when I had them I remembered I hadn’t put this recipe up yet. This recipe for sloppy joes is so easy a 10 year old could do it.

Is this a good recipe. I think so, most of my family thinks so and most importantly my girlfriends granddaughter thinks so. She thinks they taste like the sloppy joes she eats at school. I didn’t take that as a compliment because school food was really bad when I was young. However after she ate 4 of them I got the hint she liked them. Funny but she seems to think my sloppy joes taste a lot like Manwich. I don’t and I don’t like Manwich either. Mine are much better.

Using your spatula chope the ground beef up, in the frying pan, while it’s frying, until you have pieces about the ssize of a small marble. Add salt and pepper to taste. Don’t worry you won’t get it to salty.

Turn the oven on and set it to 350 degrees.

While the hamburger and onion is browning open the two cans of cream of chicken soup and put them into the 5 quart pan. Ad 4 soup cans of milk and turn the stove on medium heat. While the soup and milk is heating up, slice up the potatos into the milk and soup mixture. Stir it with the big spoon so it doesn’t stick to the bottom of the pan.

The potatoes shold be even sized slices about as thick as two credit cards. If the potatos are reall large, cut them in half, the long way, before you slice them up. If you have a potato slicer that will work just fine. Get the complete hamburger potato casserole recipe.
